doc: crypto_sign: fix wording nits, grammar

In particular:

- clarify NULL goes in public_key (not secret_key)
- add parenthetical note to define the term "fat public key" inline
- fix commas (I actually had to look up the rules for comma-before-but)
- avoid colloquial "we"
